My name is Simone Martinelli and I was born in Rome in 1978. Since then I’ve always sought out new and stimulating experiences. I’ve constantly deepened my passions and studies, experimenting both in and out the kitchen.

Dough has always captured my curiosity: the material changes in my hands, transforming into something that wasn’t there before… So I studied and perfected sourdough doughs for bread and pizza, egg pasta, puff pastry, and shortcrust pastry of all kinds.

I studied near and far languages ​​and cultures, graduating from Sapienza University in Rome. I delved into important topics, first earning a degree in Naturopathy from the Rudy Lanza Institute with a thesis on Natural Cuisine, and then in Shiatsu from the European Institute. I discovered surfing and the unique sensations that the crest of every wave crashing on the shores of the globe can provide, then climbing and the vertigo of heights: my life is a constant discovery and adventure.
